  • ½ cup chopped red onion
  • ½ cup chopped bell pepper
  • 4 large eggs
  • salt (to taste)
  • 1 tablespoon butter
  • 4 whole wheat English muffins
  • 4 slices sharp cheddar cheese
  • 4 slices cooked turkey turkey turkey bacon
  • ¾ cup guacamole

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Add chopped onion and bell pepper; cook until softened (about 3 minutes). Transfer to a bowl and set aside.
  2. In a mixing bowl, crack the eggs and season with salt. Whisk until combined.
  3. Melt butter in the skillet over medium-low heat. Pour in whisked eggs and scatter cooked veggies on top. Let cook until edges start to set (about 1 minute).
  4. Lift edges of the omelet with a spatula, allowing uncooked eggs to flow underneath until no liquid remains on top.
  5. Reduce heat, cover if necessary, and let it finish cooking until mostly set. Fold omelet into thirds and cut into four equal pieces.
  6. Toast English muffins until golden brown. Assemble each sandwich with cheese, an omelet piece, half a slice of turkey turkey turkey bacon, and guacamole. Top with another muffin half and serve immediately.
