  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp salt

  • 6 tbsp cold unsalted butter, cubed

  • ¾ cup buttermilk (plus more if needed)

  • Optional: ½ cup shredded cheddar cheese or chopped fresh herbs for flavor boost


Instructions

Step 1: Make the Turkey Sausage Gravy
In a large skillet over medium heat, cook the turkey sausage until browned and fully cooked, breaking it up with a spoon.
Add butter to the pan and stir until melted.
Sprinkle in the flour and stir to coat the sausage evenly.
Cook for 1–2 minutes to form a roux.
Slowly whisk in the milk, stirring constantly to avoid lumps.
Add garlic powder, onion powder, pepper, and salt.
Simmer for 5–7 minutes, stirring frequently, until the gravy is thick and creamy.
Taste and adjust seasoning. Remove from heat and set aside.

Step 2: Prepare the Biscuit Dough
Preheat oven to 400°F (200°C).
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Add buttermilk and stir just until a shaggy dough forms (don’t overmix).
Fold in cheese or herbs if using.
Turn dough out onto a lightly floured surface and gently knead 2–3 times.
Pat into a ¾-inch thick round and cut biscuits using a biscuit cutter or glass.

Step 3: Assemble the Pie
Pour the sausage gravy into a greased 9×13-inch baking dish and spread evenly.
Arrange the biscuit rounds on top, slightly touching.
Brush biscuit tops with a little melted butter or milk for golden color.

Step 4: Bake the Casserole
Bake for 20–25 minutes, or until biscuits are golden brown and cooked through.
If biscuits brown too quickly, cover loosely with foil during the last 5 minutes.

Step 5: Cool Slightly and Serve
