  • 3 cups gluten-free oats
  • 1 cup vanilla protein powder
  • 2 Tbsp ground cinnamon
  • ½ tsp pink Himalayan sea salt
  • 1 cup pure maple syrup
  • 1 ½ cup nut butter
  • ½ cup coconut oil (half melted)
  • 1 tsp vanilla extract
  • ¼½ cup white chocolate chips
  • ¼½ cup freeze dried strawberries

Instructions

  1. In a food processor, blend 3 cups of gluten-free oats until they have a flour-like consistency.
  2. Add 1 cup of vanilla protein powder, 2 tablespoons of ground cinnamon, ½ teaspoon of pink Himalayan sea salt, 1 cup of pure maple syrup, 1½ cups of nut butter, ½ cup of melted coconut oil, and 1 teaspoon of vanilla extract. Process until well combined.
  3. Gently fold in ¼ to ½ cup each of white chocolate chips and freeze-dried strawberries using a mixing bowl.
  4. Using a tablespoon measuring scoop or cookie scoop, portion out the mixture and roll it into balls. Place on a lined baking sheet.
  5. For optimal texture, refrigerate for about 30 minutes before enjoying.
