  • 2 lb boneless skinless chicken breast (cut into bite-sized pieces)
  • 1 can coconut milk
  • ½ cup peanut butter
  • 1 clove garlic (minced)
  • 2 tbsp red curry paste
  • 3 tsp fish sauce
  • Liquid stevia (or sweetener of choice, to taste)
  • Salt and pepper

Instructions

  1. Prepare the chicken by placing the bite-sized pieces in the bottom of the slow cooker. Season generously with salt and pepper.
  2. In a medium bowl, mix together coconut milk, peanut butter, minced garlic, red curry paste, fish sauce, and liquid stevia until well combined.
  3. Pour the sauce mixture over the seasoned chicken and gently stir to coat all pieces evenly.
  4. Cover and cook on low for 5-6 hours or high for 3-4 hours.
