Ingredients
- 1.5 lbs chicken cutlets or breasts (pounded to 1/4 inch thick)
- 4 tablespoons olive oil
- 3 garlic cloves (minced)
- 1 can (10.5 oz) cream of chicken soup with herbs
- 1.5 cups milk
- 1 oz packet ranch seasoning
- 3 lbs russet potatoes
- 6 oz shredded cheese (your choice)
- 1.5 tablespoons Italian seasoning
- 2 tablespoons butter
- 1/2 tsp onion powder
- optional seasoning – 1/4 tsp rubbed or dried sage, 1/4 tsp rosemary, 1/4 tsp thyme
- 1 cup half and half
- 1/2 tsp garlic powder
- 1/2 tsp salt
- pepper to taste
Instructions
- 1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken with Italian seasoning, salt, and pepper.
- 2. Cook the chicken for about 5–7 minutes on each side until golden brown. Remove from the skillet and set aside.
- 3. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in cream of chicken soup, milk, ranch seasoning, onion powder, and optional herbs.
- 4. Return the chicken to the skillet and let it simmer for about 10 minutes until coated in gravy.
- 5. For the mashed potatoes, boil cubed russet potatoes until tender, then mash with half-and-half, softened butter, shredded cheese, garlic powder, salt, and pepper until creamy.
- 6. Serve generous portions of mashed potatoes topped with ranch chicken and gravy.
