  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup melted butter
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar (for whipped cream)
  • Chopped pecans (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut rounds from tortillas using a cookie cutter. Mix granulated sugar and cinnamon in a dish.
  3. Stab each tortilla with a fork, brush with melted butter, then coat in the cinnamon-sugar mixture.
  4. Place tortilla rounds in an upside-down muffin tin; bake for about 10 minutes until golden brown.
  5. While cooling, prepare whipped cream by beating heavy whipping cream and powdered sugar until stiff peaks form.
  6. In a bowl, mix softened cream cheese and powdered sugar until smooth; add pumpkin puree, vanilla extract, and pumpkin pie spice.
  7. Pipe or spoon pumpkin filling into taco shells, top with whipped cream, and garnish as desired.
