- 1/2 tsp pure vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/2 cup heavy whipping cream
- 2 tbsp powdered sugar (for whipped cream)

Instructions
- Preheat oven to 400°F (200°C).
- Cut rounds from tortillas using a cookie cutter. Mix granulated sugar and cinnamon in a dish.
- Stab each tortilla with a fork, brush with melted butter, then coat in the cinnamon-sugar mixture.
- Place tortilla rounds in an upside-down muffin tin; bake for about 10 minutes until golden brown.
- While cooling, prepare whipped cream by beating heavy whipping cream and powdered sugar until stiff peaks form.
- In a bowl, mix softened cream cheese and powdered sugar until smooth; add pumpkin puree, vanilla extract, and pumpkin pie spice.
- Pipe or spoon pumpkin filling into taco shells, top with whipped cream, and garnish as desired.
