- 3/4 cup all-purpose flour
- 1/4 cup oat flour
- 1/2 teaspoon pumpkin pie spice

- 1 large egg (at room temperature)
- 1/3 cup light brown sugar
- 1/4 cup oil
- 1/2 teaspoon vanilla extract
- 1/2 cup canned pumpkin
- 1¼ cups powdered sugar
- 3 tablespoons pure maple syrup
- 1 tablespoon dark corn syrup
- 1/2 tablespoon water
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini donut pan.
- In a bowl, combine all-purpose flour, oat flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and salt.
- In another bowl, whisk together the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.

- Bake for 6–7 minutes until they spring back when touched.
