  • 1 large egg (at room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • 1/2 tablespoon water
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini donut pan.
  2. In a bowl, combine all-purpose flour, oat flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Transfer batter to a piping bag and fill each donut cavity halfway.
  6. Bake for 6–7 minutes until they spring back when touched.
  7. Cool on a wire rack.
