For the Base:

  • 4 large flour tortillas (8-inch size)

  • 1 tbsp vegetable oil (for brushing)

For the Filling:

  • 1 lb ground beef (or ground turkey)

  • 1 tbsp taco seasoning (store-bought or homemade)

  • 1/3 cup water

  • 1 cup refried beans

  • ½ cup salsa (chunky preferred)

  • 1½ cups shredded Mexican cheese blend

Toppings (Optional but Recommended):

  • 1 small tomato, diced

  • ¼ cup sliced black olives

  • ¼ cup green onions, chopped

  • ¼ cup fresh cilantro, chopped

  • ½ cup shredded lettuce

  • Sour cream or plain Greek yogurt (for drizzling)

  • Hot sauce or jalapeño slices for extra heat


Instructions

Step 1: Preheat the Oven & Crisp the Tortillas

  1. Preheat your oven to 400°F (200°C).

  2. Place the tortillas on a baking sheet and lightly brush both sides with vegetable oil.

  3. Bake for 4-5 minutes per side, until golden and crispy. Set aside.

Step 2: Cook the Ground Beef
4. In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks.
5. Drain excess fat if needed, then add taco seasoning and 1/3 cup of water.
6. Stir well and simmer for 2-3 minutes until the mixture thickens. Remove from heat.

Step 3: Layer the Pizza
7. Spread about ¼ cup of refried beans over two of the tortillas.
8. Top each with an even layer of seasoned beef, followed by a spoonful of salsa.
9. Place the remaining tortillas on top to create a “pizza sandwich.”
10. Sprinkle the top of each pizza with shredded cheese.

Step 4: Bake to Perfection
11. Return the layered pizzas to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.

Step 5: Add Toppings & Serve
12. Remove from the oven and let cool for 2 minutes.
13. Add diced tomatoes, black olives, green onions, cilantro, and shredded lettuce on top.
14. Drizzle with sour cream and hot sauce if desired. Slice and serve immediately.

Notes

Crisp the Tortillas First – Pre-baking them ensures your pizza doesn’t get soggy.
Go Light on Wet Ingredients – Too much salsa or sour cream before baking can make the crust soggy.
Double the Cheese – If you’re a cheese lover, feel free to add more on top for an extra gooey finish.
