  • 1/2 cup sour cream
  • 1 cup cranberry sauce
  • 1/2 cup all-purpose flour (for crumb topping)
  • 1/3 cup light brown sugar (for crumb topping)
  • 1/2 tsp cinnamon (for crumb topping)
  • 1/4 tsp ground green cardamom (for crumb topping)
  • pinch of salt (for crumb topping)
  • 1/3 cup unsalted butter (melted, for crumb topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or line it with muffin liners.
  2. In a medium bowl, mix flour, brown sugar, cinnamon, cardamom, and salt. Stir in melted butter until crumbly; set aside.
  3. In a large bowl, whisk together flour, baking powder, and cinnamon.
  4. In another bowl, cream together butter and sugars until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Mix buttermilk and sour cream into the butter mixture until combined.
  6. Gradually fold in dry ingredients until just mixed.
  7. Spoon half of the batter into the muffin cups; add cranberry sauce on top, then layer with remaining batter and more cranberry sauce if desired.
  8. Sprinkle crumb topping over each muffin before baking for about 25 minutes or until golden brown.
  9. Let cool slightly before transferring to wire racks.
