Ingredients
- 4–5 medium-large bell peppers (any color)
- ½ pound lean ground beef or ground turkey
- 1 cup cooked brown rice
- ½ cup finely chopped yellow onion
- 15-ounce can diced tomatoes (drained)
- 8-ounce can tomato sauce (divided)
- 2 teaspoons dried Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella, divided)
Instructions
- Slice the tops off the bell peppers and remove seeds and membranes.
- Brown the ground beef in the Instant Pot using the Saute function or in a skillet.
- In a large bowl, combine cooked rice, browned beef, onion, tomatoes, ¼ cup tomato sauce, seasonings, and half of the cheese.
- Pour water into the Instant Pot inner pot and place a metal trivet inside.
- Fill each pepper with the mixture until just full and place them on the trivet.
- Top each pepper with remaining tomato sauce and close the lid.
- Set cooking time to high pressure for 8 minutes if meat is browned; otherwise, set for 16 minutes.
- Once done, carefully release pressure and check internal temperature of peppers to reach at least 165°F before serving.
- Top with remaining cheese and let melt before serving.
