  • 2 ¼ tsp active dry yeast (1 packet)

  • 2 tbsp honey or maple syrup

  • 2 cups whole wheat flour

  • 1 to 1 ½ cups all-purpose flour

  • 1 tsp salt

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, combine warm water, honey, and yeast.

  2. Stir gently and let it sit for 5–10 minutes until foamy.

  3. If the mixture doesn’t foam, your yeast may be inactive—start over with fresh yeast.

Step 2: Mix Wet Ingredients

  1. In a large mixing bowl, whisk together cottage cheese, olive oil, and eggs.

  2. Add the activated yeast mixture and mix well until combined.

Step 3: Form the Dough

  1. Add whole wheat flour and salt to the wet ingredients. Stir to combine.

  2. Gradually add all-purpose flour, ½ cup at a time, until the dough becomes soft and only slightly sticky.

  3. Knead the dough by hand for 8–10 minutes or in a stand mixer with a dough hook for 5–6 minutes until smooth and elastic.

Step 4: First Rise

  1. Place the dough in a lightly oiled bowl, cover with a kitchen towel or plastic wrap.

  2. Let it rise in a warm, draft-free area for 1 to 1.5 hours, or until doubled in size.

Step 5: Shape the Loaf

  1. Once risen, punch down the dough and turn it out onto a floured surface.

  2. Shape into a log and place into a greased loaf pan.

  3. Cover again and let it rise for another 30–45 minutes, until it puffs up slightly above the edge of the pan.

Step 6: Bake the Bread

  1. Preheat your oven to 350°F (175°C).

  2. Bake for 35–40 minutes, or until golden brown and the loaf sounds hollow when tapped on the bottom.

Step 7: Cool Before Slicing

  1. Let the bread cool in the pan for 5–10 minutes.

  2. Then transfer to a wire rack to cool completely before slicing to avoid a gummy texture.
