- 80ml sunflower oil

- 350g plain flour
- 50g unsalted butter (for topping)
- 40g light brown sugar (for topping)
- 75g plain flour (for topping)
- 1/2 tsp cinnamon (for topping)
- 1/2 tsp ginger (for topping)
- 1/4 tsp nutmeg (for topping)
- 100g icing sugar (for glaze)
- 1 tsp water (for glaze)
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the unsalted butter, sunflower oil, and light brown sugar until fluffy. Mix in the egg and vanilla extract.
- Stir in the spices (cinnamon, ginger, nutmeg), baking powder, and half of the plain flour until combined.
- In another bowl, mix together the topping ingredients until crumbly.
