  • 1 tsp baking powder
  • 350g plain flour
  • 50g unsalted butter (for topping)
  • 40g light brown sugar (for topping)
  • 75g plain flour (for topping)
  • 1/2 tsp cinnamon (for topping)
  • 1/2 tsp ginger (for topping)
  • 1/4 tsp nutmeg (for topping)
  • 100g icing sugar (for glaze)
  • 1 tsp water (for glaze)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the unsalted butter, sunflower oil, and light brown sugar until fluffy. Mix in the egg and vanilla extract.
  3. Stir in the spices (cinnamon, ginger, nutmeg), baking powder, and half of the plain flour until combined.
  4. In another bowl, mix together the topping ingredients until crumbly.
  5. Drop spoonfuls of cookie dough onto the baking sheet and sprinkle the topping over each mound.
  6. Bake for about 14 minutes or until golden around the edges. Allow cooling before drizzling with glaze made from whisking icing sugar and water.
