  • 3 pounds yellow onions
  • 3 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • ½ cup dry white grape juice
  • 6 cups low sodium beef broth
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • 4 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 8 slices baguette
  • 2 ounces Gruyere cheese (shredded)

Instructions

  1. Slice onions into ¼-inch thick slices.
  2. Heat unsalted butter and olive oil in a large Dutch oven over medium heat until melted.
  3. Add sliced onions; cook for about 25–30 minutes until soft and browned.
  4. Stir in minced garlic and flour; cook for another minute.
  5. Pour in dry white grape juice, scraping up browned bits from the pot.
  6. Add beef broth, salt, pepper, thyme, and bay leaves; bring to a simmer.
  7. Allow soup to simmer uncovered for about 30 minutes.
  8. Preheat oven to 400°F; toast baguette slices on a baking sheet for 5–6 minutes until golden brown.
  9. Taste soup and adjust seasoning; remove thyme stems and bay leaves before serving.
  10. Preheat broiler to 425°F; transfer soup into oven-safe bowls, add toasted baguette slices and cheese on top, then broil for 2–4 minutes until cheese is melted.
