- 1 1/2 cups brown rice
- 3 cups chicken bone broth
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons grass-fed butter or ghee
- 1 Tbsp smoked paprika
- 1 tsp fine sea salt
- 1/2 tsp ground black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper
- Fresh cilantro or parsley for garnish
Instructions
- Rinse the brown rice under cold water in a fine mesh strainer until the water runs clear; drain well.
- Pat shrimp dry with a paper towel for better searing.
- In a mixing bowl, combine all seasoning ingredients.
- Heat 2 tablespoons of butter in a large skillet over medium heat. Add shrimp in a single layer and sprinkle with half of the seasoning blend. Cook until pink (about 2 minutes per side); set aside and keep warm.
- In the same skillet, add remaining butter and rinsed rice along with the rest of the seasoning. Toast rice for about one minute while stirring.
- Pour in chicken bone broth and bring to boil. Reduce heat to low, cover, and cook for 22-25 minutes or until rice is tender.
- Once cooked, gently stir in shrimp and garnish with chopped cilantro or parsley before serving hot.
