			- 3 boneless chicken breasts
- 1 tablespoon minced garlic
- 1 can crushed tomatoes (28 oz)
- 1 can tomato sauce (15 oz)
- 4 cups chicken broth
- 1 cup freshly shaved parmesan cheese
- 1 cup heavy whipping cream
- 8 oz uncooked rotini pasta
- 1/2 cup breadcrumbs
- 1 tablespoon butter
- 1 1/2 cups shredded mozzarella
Instructions
- Place chicken breasts in the slow cooker. Add garlic, crushed tomatoes, tomato sauce, salt, pepper, and Italian seasoning. Pour in chicken broth.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
- Remove chicken and shred it with two forks before returning it to the pot.
- Stir in parmesan cheese, heavy cream, and uncooked rotini pasta. Cover and cook on low for another 30 minutes or high for 15 minutes until pasta is tender.
- In a saucepan, melt butter over medium heat and sauté breadcrumbs until golden brown.
- Serve soup hot, topped with mozzarella cheese and sautéed breadcrumbs.
