  • 3 tablespoons butter
  • 1/2 cup finely diced onion
  • 2 cloves garlic (minced)
  • 3 tablespoons flour
  • 1 1/2 cups frozen mixed vegetables
  • 2 cups chopped cooked chicken or turkey
  • 14 ounces chicken broth
  • 1/2 cup white grape juice (or broth)
  • 3 cups mashed potatoes
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large sauté pan over medium-high heat, melt the butter and sauté the diced onion for about 3 minutes until softened.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in flour and cook for another minute before adding frozen vegetables and chopped chicken.
  5. Pour in chicken broth and white grape juice (or broth), seasoning with salt, pepper, and poultry seasoning.
  6. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  7. Reheat mashed potatoes until creamy, adding milk if needed.
  8. Pour the chicken mixture into an 8″ x 8″ baking pan and spread the mashed potatoes evenly on top.
  9. Bake for 20-25 minutes until golden brown.
  10. Let cool for 5 minutes before serving.
