-
1 tsp salt

½ tsp black pepper
-
2 tbsp olive oil
-
2 tbsp unsalted butter
For the Sauce:
-
2 tbsp unsalted butter
-
8 oz button mushrooms, sliced
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 cup chicken broth
-
1 cup heavy cream
-
1 cup shredded mozzarella cheese
-
½ cup shredded cheddar cheese
-
1 tsp Italian seasoning
-
½ tsp paprika
For Garnish & Serving:
-
2 tbsp fresh parsley, chopped
-
Steamed rice, mashed potatoes, or buttered noodles
Instructions
Step 1: Prepare the Chicken
Pound the chicken breasts to an even thickness using a meat mallet or rolling pin.
Season the flour with salt and pepper, then dredge each chicken breast lightly in the seasoned flour, shaking off any excess.
Step 2: Brown the Chicken
Heat olive oil and butter in a large skillet over medium-high heat.
Add the chicken breasts and cook for 3-4 minutes on each side until golden brown but not cooked through.
Transfer the browned chicken to a 9×13-inch baking dish.
Step 3: Make the Mushroom Sauce
In the same skillet, add 2 tbsp butter and let it melt.
Add the sliced mushrooms and chopped onion. Cook for about 5 minutes until softened.
Add minced garlic and cook for another minute.
Pour in the chicken broth and scrape up any brown bits from the bottom of the pan.
Stir in the heavy cream, Italian seasoning, and paprika.
Simmer the sauce for 3-5 minutes until slightly thickened.
Step 4: Assemble the Dish
Pour the mushroom sauce over the chicken in the baking dish.
Sprinkle shredded mozzarella and cheddar cheese evenly over the top.
Step 5: Bake the Chicken Gloria
Preheat your oven to 375°F (190°C).
Cover the baking dish loosely with foil and bake for 20 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and lightly golden.
Step 6: Garnish and Serve
Remove from oven and let rest for a few minutes.
Sprinkle with fresh parsley before serving.
Serve over steamed rice, mashed potatoes, or buttered noodles for a complete meal.
Notes
Use Even Chicken Pieces – Pounding them to an even thickness ensures even cooking.
Don’t Overcrowd the Pan – When browning, work in batches if needed to avoid steaming the chicken.
Thicken the Sauce – Let the sauce simmer a bit before pouring over the chicken to achieve a richer consistency.
Customize the Cheese – Feel free to substitute or mix in other cheeses like provolone or Swiss.
Fresh Herbs Matter – Garnishing with fresh parsley or even basil adds a bright, fresh flavor to the rich dish.
