  • 6 large bell peppers (any color)
  • 1 lb lean ground beef (or turkey/chicken)
  • 1 small onion (diced)
  • 1½ tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 cup frozen corn
  • 1 cup black beans (drained and rinsed)
  • 2⅓ cups shredded cheese (sharp cheddar and Monterey Jack)

Instructions

  1. Preheat your oven to 375°F and lightly grease a baking dish.
  2. Prepare the rice according to package instructions.
  3. Cut the tops off the bell peppers and remove seeds. Season the insides with salt, pepper, and chili powder.
  4. In a skillet over medium-high heat, cook ground beef with diced onion until browned. Stir in spices.
  5. Mix in corn, black beans, rice, and cheeses until well integrated.
