- 12 ounces Dry Pasta (Bucatini, Spaghetti or Linguine)
- ½ Cup Unsalted Butter (divided)
- 1 large Butternut Squash
- ½ tsp Ground Ginger
- ½ tsp Nutmeg
- ½ tsp Cumin
- Pinch of Cayenne
- 2 cloves Garlic (smashed)
- 8–12 Fresh Sage Leaves
- 1 Cup Whole-Milk Ricotta (optional)
- ½ Cup Toasted Walnuts (coarsely chopped)
- Kosher Salt & Pepper (to taste)
- ½ Cup Parmesan cheese (freshly grated)
Instructions
- Cook pasta in salty boiling water until al dente. Reserve some pasta water before draining.
- In a skillet, melt butter and sauté diced butternut squash with spices until tender and caramelized.
- In the same skillet, prepare brown butter sauce by melting remaining butter with garlic until browned; add sage leaves to crisp.
