  • 12 ounces Dry Pasta (Bucatini, Spaghetti or Linguine)
  • ½ Cup Unsalted Butter (divided)
  • 1 large Butternut Squash
  • ½ tsp Ground Ginger
  • ½ tsp Nutmeg
  • ½ tsp Cumin
  • Pinch of Cayenne
  • 2 cloves Garlic (smashed)
  • 812 Fresh Sage Leaves
  • 1 Cup Whole-Milk Ricotta (optional)
  • ½ Cup Toasted Walnuts (coarsely chopped)
  • Kosher Salt & Pepper (to taste)
  • ½ Cup Parmesan cheese (freshly grated)

Instructions

  1. Cook pasta in salty boiling water until al dente. Reserve some pasta water before draining.
  2. In a skillet, melt butter and sauté diced butternut squash with spices until tender and caramelized.
  3. In the same skillet, prepare brown butter sauce by melting remaining butter with garlic until browned; add sage leaves to crisp.
  4. Combine cooked pasta with brown butter sauce, stirring in reserved pasta water and parmesan cheese; gently fold in butternut squash.
  5. Serve hot, garnished with crispy sage leaves, walnuts, and optional ricotta.
