For the Tortellini:

  • 1 package (20 oz) refrigerated cheese tortellini

  • Salt for boiling water

For the Buffalo Chicken Sauce:

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • 2 cups cooked chicken breast, shredded

  • ½ cup buffalo-style hot sauce (adjust to taste)

  • ¾ cup plain Greek yogurt (or sour cream)

  • ½ cup cream cheese, softened

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • ¼ cup milk (for thinning the sauce, as needed)

  • ½ tsp onion powder

  • ¼ tsp black pepper

For Topping & Garnish:

  • ¼ cup shredded cheddar cheese

  • 2 tbsp chopped green onions

  • 1 tbsp chopped parsley (optional)


Instructions

Step 1: Cook the Tortellini

  1. Bring a large pot of salted water to a boil.

  2. Add the cheese tortellini and cook according to the package instructions (usually about 3–4 minutes).

  3. Drain and set aside.

Step 2: Make the Buffalo Sauce
4. In a large skillet over medium heat, melt the butter.
5. Add minced garlic and sauté for 1–2 minutes until fragrant.
6. Stir in the shredded chicken and cook for 2–3 minutes to heat through.
7. Add the buffalo-style hot sauce, cream cheese, Greek yogurt, and onion powder.
8. Stir until the cream cheese melts and the mixture becomes smooth and creamy.
9. If the sauce is too thick, add a splash of milk to reach your desired consistency.

Step 3: Add Cheese & Combine
10. Stir in shredded mozzarella and Parmesan cheese.
11. Let it simmer for another 1–2 minutes until the cheese is melted and incorporated.
12. Add the cooked tortellini to the skillet and toss gently to coat each piece with the buffalo sauce.

Step 4: Finish & Garnish
13. Sprinkle the cheddar cheese on top and cover for 1–2 minutes until melted.
14. Garnish with chopped green onions and parsley if using.
15. Serve hot and enjoy the creamy, spicy goodness.
