  • 1 tablespoon olive oil
  • 2 cups chopped vegetables (red onion, bell pepper, mushrooms, or broccoli)
  • 1 pound turkey breakfast sausage (removed from casings)
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito-size tortillas
  • 2 cups shredded cheddar cheese (or a blend)

Instructions

  1. Preheat the oven to 375°F if baking immediately.
  2. Heat olive oil in a nonstick skillet over medium heat. Add chopped vegetables and cook until softened (about 4 minutes). Transfer to a bowl.
  3. In the same skillet, cook the turkey sausage until browned; add to the vegetable bowl.
  4. Whisk eggs with salt in a separate bowl. Melt butter in the skillet, then add eggs and cook gently until set.
  5. Combine cooked eggs with the sausage and vegetables.
  6. To assemble, place egg mixture on one side of each tortilla, sprinkle cheese on top, and roll tightly.
  7. Bake on a parchment-lined sheet for 5–10 minutes or flash freeze for later use.
