- 1 pound turkey breakfast sausage (removed from casings)
- 8 eggs
- 2 pinches salt (to taste)
- 2 teaspoons unsalted butter
- 8 burrito-size tortillas
- 2 cups shredded cheddar cheese (or a blend)
Instructions
- Preheat the oven to 375°F if baking immediately.
- Heat olive oil in a nonstick skillet over medium heat. Add chopped vegetables and cook until softened (about 4 minutes). Transfer to a bowl.
- In the same skillet, cook the turkey sausage until browned; add to the vegetable bowl.
- Whisk eggs with salt in a separate bowl. Melt butter in the skillet, then add eggs and cook gently until set.
- Combine cooked eggs with the sausage and vegetables.
- To assemble, place egg mixture on one side of each tortilla, sprinkle cheese on top, and roll tightly.
