Ingredients
- 4 tablespoons unsalted butter
- 1/2 cup honey or pure maple syrup
- 1/2 cup unsweetened applesauce
- 1/2 cup plain Greek yogurt
- 1/4 cup milk (dairy, almond, etc.)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1 1/2 cups white whole wheat flour
- 1 large baking apple (chopped)
Instructions
- Preheat your oven to 350 degrees F. Prepare your muffin pans by spraying them with cooking spray.
- In a large mixing bowl, place the butter and melt it in the microwave or on the stove.
- Add the honey or pure maple syrup, applesauce, plain Greek yogurt, milk, eggs, and vanilla to the melted butter. Whisk everything together until well combined.
- Sprinkle in the baking soda, baking powder, salt, and cinnamon into the bowl with the wet ingredients. Whisk until fully incorporated.
- Gradually add the white whole wheat flour into the mixture. Use a rubber spatula to gently mix until it's almost combined.
- Fold in the chopped apple pieces with the rubber spatula, reserving some pieces for topping if desired.
- Scoop the batter into each greased muffin well until they're about two-thirds full. Press reserved apple pieces into the tops of each muffin if desired.
- Bake regular-sized muffins for 16-18 minutes or mini muffins for about 12 minutes until a tester comes out clean.
- Allow your muffins to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
