Instructions

  1. Preheat your oven to 425°F and prepare a muffin pan with cooking spray.
  2. Squeeze excess moisture from the shredded zucchini using a clean towel.
  3. Melt the butter in a large mixing bowl. Add applesauce (or mashed banana), honey (or maple syrup), eggs, and vanilla extract. Whisk well.
  4. Mix in cinnamon, baking powder, baking soda, and salt until combined. Gradually add flour, mixing gently until just incorporated.
  5. Fold in the zucchini and optional mix-ins carefully.
  6. Fill the muffin pan evenly and tap it on the counter to level.
  7. Bake at 425°F for 5 minutes; then reduce heat to 350°F and bake for an additional 11–13 minutes until a toothpick comes out clean.
