  • 1 large egg (beaten)
  • ¼ cup grated Parmesan
  • ½ cup all-purpose flour
  • ¼ teaspoon ground black pepper

  • Oil for frying (about 1 ½ Tablespoons)

Instructions

  2. Transfer the shredded zucchini into cheesecloth and squeeze out excess moisture.
  3. In a mixing bowl, combine the drained zucchini with beaten egg, Parmesan, flour, black pepper, and garlic powder until well mixed.
  4. Heat oil in a skillet over medium heat until shimmering.
  5. Drop spoonfuls of the mixture into the skillet and flatten each one slightly.
