Ingredients

  • 1 Tbsp olive oil
  • 3 large garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans (15 oz each) chickpeas
  • 1 large potato, diced
  • 2 cups low-sodium vegetable broth
  • Salt & black pepper to taste

Instructions

  1. Blend one can of chickpeas with its liquid until smooth.
  2. Heat olive oil in a large pot over medium heat; sauté minced garlic for about 1 minute.
  3. Add the blended chickpeas and the second can of drained chickpeas to the pot along with the diced potato, paprika, rosemary, thyme, chili flakes, and pepper.
  4. Stir in vegetable broth and bring to a boil; reduce heat and simmer for about 25 minutes.
  5. Taste and adjust seasoning before serving hot.
