Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine applesauce and granulated sugar. Mix well.
  3. Add eggs one at a time, mixing thoroughly after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually stir the dry ingredients into the wet mixture until just combined.
  6. Gently fold in grated carrots, shredded coconut, chopped nuts (if using), vanilla extract, and crushed pineapple with juice.
  7. Pour batter into a greased pan: either a lightly greased 9 x 13 inch pan or two greased round pans.
  8. Bake larger pans for about 35–40 minutes or smaller pans for about 25–30 minutes until a toothpick comes out clean.
  9. Allow cakes to cool in their pans for about 10 minutes before transferring them to a cooling rack.
