  • 1 medium onion (finely chopped)
  • 6 cloves garlic (finely chopped or minced)
  • 3 carrots (finely chopped)
  • 3 cups celery stalks (finely chopped)
  • 2 teaspoons salt
  • 1 pound lentils (picked and rinsed)
  • 1 (15-ounce) can diced tomatoes
  • 6 cups chicken or vegetable broth (plus more if needed)
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground all-spice
  • 1/4 teaspoon ground ginger
  • Juice from 1/2 lemon (about 2 teaspoons)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions, garlic, carrots, and celery; sauté until onions are translucent (about 5–6 minutes).
  3. Stir in rinsed lentils, diced tomatoes, broth, coriander, cumin, black pepper, all-spice, and ginger. Bring to a boil.
  4. Lower the heat; cover and simmer for 30–35 minutes until lentils are tender. Season with salt and stir in lemon juice.
  5. For creaminess, blend part of the soup using an immersion blender or regular blender until smooth.
