Ingredients

For the Filling:
1 lb ground beef
1 packet taco seasoning (or 1 tbsp homemade)
½ cup water
1 can (16 oz) refried beans
6 medium flour tortillas (6–8 inches)

For the Enchilada Sauce:
1 can (10 oz) red enchilada sauce
½ tsp garlic powder
½ tsp onion powder
¼ tsp cumin
¼ tsp smoked paprika (optional)

For Topping:
1½ cups shredded cheddar cheese
½ small white onion, finely diced


Instructions

Step 1: Cook the Ground Beef
In a skillet over medium heat, cook ground beef until browned and no longer pink.
Drain excess grease, then stir in taco seasoning and ½ cup water. Simmer for 5 minutes until thickened.

Step 2: Warm the Beans and Sauce
In a separate saucepan, heat refried beans over low heat until smooth and warm.
In another small pan, heat enchilada sauce and whisk in garlic powder, onion powder, cumin, and paprika. Let simmer for 5 minutes.

Step 3: Assemble the Enchiritos
Lay a tortilla flat and spread a layer of warm refried beans down the center.
Top with 2–3 tbsp of seasoned beef.
Roll up tightly like a burrito and place seam-side down in a greased 9×13 baking dish.
Repeat with remaining tortillas.

Step 4: Add Sauce and Cheese
Pour the warm enchilada sauce evenly over the rolled tortillas.
Sprinkle shredded cheddar cheese over the top.
Add a handful of diced onions for that classic Enchirito touch.

 

Step 5: Bake and Serve
Cover the baking dish with foil and bake at 375°F for 15 minutes.
Remove foil and bake for another 5 minutes until cheese is fully melted and bubbly.
Serve hot, with extra sauce spooned on top if desired.

Notes

Use Soft Tortillas – Slightly warm them before rolling to prevent tearing.
Don’t Overfill – Keep fillings moderate so they roll up neatly.
Make It Saucy – The enchilada sauce is key to that signature flavor.
Add Black Olives – Optional, but authentic to some older Taco Bell versions.
Serve with Hot Sauce – Mild or fire sauce on the side gives it that fast-food vibe.
