  • 32 oz cream cheese (room temperature)
  • ⅔ cup cane sugar
  • ¾ cup sour cream (room temperature or Greek yogurt)
  • ½ cup heavy cream (room temperature)
  • 1 tsp pure vanilla extract
  • 4 large eggs (room temperature)

  • ⅓ cup heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the sugar cookie crust by mixing flour, baking soda, and salt; cream together butter and sugar; add egg and vanilla; combine with dry ingredients; fold in sprinkles and press into a greased springform pan.
  3. Make cookie dough balls by mixing flour and salt; cream butter and sugar; add vanilla and milk; mix in dry ingredients and sprinkles, then roll into small balls.
  4. For the cheesecake filling, beat cream cheese until smooth; mix in sugar, sour cream, heavy cream, vanilla, then add eggs one at a time.
  5. Layer half of the filling over the crust, add dough balls on top, then pour remaining filling over.
  6. Bake for about 80 minutes until set around edges; cool and refrigerate for at least 4 hours.
  7. Prepare ganache by heating heavy cream; mix in white chocolate until smooth; drizzle over chilled cheesecake before serving.
