  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white whole wheat flour

Instructions

  1. Preheat your oven to 375°F.
  2. Prepare a muffin tin by spraying it with cooking spray or lining it with parchment paper.
  3. Toss chopped strawberries with ¼ cup of all-purpose flour in a bowl and set aside.
  4. Melt the butter in a microwave-safe bowl and combine it with applesauce, maple syrup, milk, vanilla extract, and eggs; whisk until smooth.
  5. Mix in baking powder, baking soda, and salt until well combined.
  6. Add white whole wheat flour and remaining all-purpose flour; mix gently until just combined.
  7. Fold in the floured strawberries carefully.
  8. Scoop batter into muffin tin wells and bake for about 16–18 minutes or until a toothpick comes out clean.
  9. Cool in the pan for about 5 minutes before transferring to a wire rack.
