  • 12 lasagna noodles
  • 10 ounces frozen chopped spinach
  • 1 egg
  • 15 ounces ricotta cheese
  • 8 ounces shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 25 ounces marinara sauce

Instructions

  1. Boil lasagna noodles in salted water until al dente. Drain and cool on parchment paper.
  2. Thaw spinach and squeeze out excess moisture. In a bowl, mix spinach with egg, ricotta, 7 ounces of mozzarella, Parmesan, salt, and pepper.
  3. Preheat oven to 350°F. Spread 1 cup marinara sauce in a baking dish.
  4. Spread cheese filling on each noodle and roll tightly. Place seam side down in the dish.
  5. Top with remaining marinara sauce and mozzarella cheese. Cover with foil and bake for 30 minutes; uncover for an additional 5–10 minutes until golden.
