  • 3 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup hot sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon Kosher salt
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cayenne pepper
  • 1 tablespoon white pepper
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons chili powder
  • 2 teaspoons celery salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 of the seasoning blend (above)
  • 2 quarts (8 cups) full-fat buttermilk
  • 1 large onion, thinly sliced
  • 5 cloves garlic, thinly sliced
  • 34 tablespoons Kosher salt
  • 3 tablespoons black peppercorns
  • (3 and 1/2 – 4 lbs) whole chicken, cut into 10-12 pieces

Instructions

  1. Prepare the marinade by mixing buttermilk, sliced onions, garlic, hot sauce, salt, and black peppercorns in a resealable bag. Add chicken pieces and refrigerate for 6-12 hours.
  2. Mix all spices in a small bowl.
  3. Remove the chicken from the marinade and coat with half of the spice mixture.
  4. In a bowl, combine flour with baking powder and remaining spices.
  5. Dredge chicken pieces in the flour mixture thoroughly.
  6. Create an egg mixture by beating eggs with buttermilk and hot sauce.
  7. Dip each piece of chicken into the egg mixture before coating again in flour.
  8. Heat oil to 350°F in a deep pot; fry chicken in batches until golden brown and cooked through.
  9. Drain on a cooling rack before serving.
