  • 1 can (15 oz) corn, drained
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, diced
  • ¼ cup cilantro, minced
  • 1 avocado, diced
  • 6 flour tortillas
  • ¾ cup mayonnaise
  • ¾ cup sour cream or plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 packet taco seasoning (1 oz)
  • 1 teaspoon onion powder
  • ½ teaspoon parsley

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream (or Greek yogurt), lime juice, taco seasoning, onion powder, and parsley in a bowl until smooth.
  2. In a large bowl, combine chopped chicken, black beans, corn, red bell pepper, cherry tomatoes, red onion, cilantro, and avocado. Gently toss to combine.
  3. Pour the dressing over the salad mixture and gently toss until evenly coated.
