  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. In a mixing bowl, cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  2. In another bowl, whisk together all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually combine the dry ingredients with the wet ingredients using low speed until just mixed—avoid overmixing.
  4. Chill dough covered in plastic wrap for at least 30 minutes.
  5. Preheat oven to 350°F (177°C).
  6. Scoop dough into balls and flatten slightly before placing on a parchment-lined baking sheet with space between each cookie.
  7. Bake for about 10-12 minutes; allow to cool on the baking sheet completely.
