For the Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs

  • 6 tbsp unsalted butter, melted

  • 2 tbsp granulated sugar

For the Brownie Layer:

  • ½ cup unsalted butter, melted

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ⅓ cup unsweetened cocoa powder

  • ½ cup all-purpose flour

  • ¼ tsp salt

  • ¼ tsp baking powder

For the S’mores Topping:

  • 1 ½ cups mini marshmallows

  • 1 cup milk chocolate chips or chopped chocolate

  • 4 graham crackers, broken into small pieces


Instructions

Step 1: Prepare the Baking Pan
Preheat your oven to 350°F (175°C).
Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2: Make the Graham Cracker Crust
In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
Press the mixture firmly into the bottom of the prepared pan to create an even layer.
Bake the crust for 8 minutes, then set aside to cool slightly.

Step 3: Prepare the Brownie Batter
In a large bowl, whisk together melted butter and sugar until smooth.
Add eggs and vanilla extract, whisking until fully incorporated.
Sift in cocoa powder, flour, salt, and baking powder. Stir just until combined—do not overmix.

Step 4: Assemble the Layers
Pour the brownie batter over the cooled graham cracker crust and spread it evenly.
Sprinkle the chocolate chips evenly over the brownie layer.

Step 5: Bake the Brownies
Bake for 25-28 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Remove from the oven but keep it on.

Step 6: Add the Marshmallows and Graham Pieces
Immediately scatter mini marshmallows and broken graham cracker pieces over the hot brownies.
Return the pan to the oven for 3-5 minutes, just until the marshmallows are puffy and lightly golden. Watch closely to avoid burning.

Step 7: Cool and Serve
Allow the brownies to cool completely in the pan before lifting them out using the parchment overhang.
Cut into squares and enjoy the gooey, chocolatey goodness!
