  • Ghee (or butter)
  • Onion
  • Celery
  • Carrot
  • Corn kernels (fresh or frozen)
  • Garlic
  • Arrowroot starch (or cornstarch)
  • Sea salt
  • Ground black pepper
  • Paprika
  • Dried thyme
  • Tomato paste
  • Bone broth (or chicken broth)
  • Coconut milk
  • Shrimp (peeled and deveined)

Instructions

  1. Heat ghee in a large Dutch oven over medium heat until melted.
  2. Sauté minced onion, chopped celery, chopped carrot, and ½ cup of corn for 2-3 minutes until tender. Add minced garlic and arrowroot starch; cook for another minute.
  3. Stir in sea salt, black pepper, paprika, dried thyme, and tomato paste until well mixed.
  4. Gradually pour in bone broth while stirring; allow to simmer for 3 minutes until slightly thickened.
  5. Blend the mixture until smooth using an immersion blender.
  6. Return to heat; stir in coconut milk and remaining corn kernels along with shrimp.
  7. Simmer gently for 4-5 minutes until shrimp is opaque. Adjust seasoning if necessary.
