  • 2 lbs boneless skinless chicken thighs or breasts (cut into 12 inch pieces)
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons lime juice
  • 1/4 cup orange juice
  • 1 tablespoon lime zest
  • 2 tablespoons sesame oil
  • 1 can (20 oz) pineapple chunks (with juice)
  • 1 red bell pepper (cut into 1-inch chunks)
  • 1 yellow bell pepper (cut into 1-inch chunks)
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/3 cup brown sugar
  • 1/3 cup hoisin sauce
  • Optional: 1 teaspoon red pepper flakes

Instructions

  1. Heat sesame oil in a large skillet over high heat. Sear the chicken pieces until browned on all sides.
  2. Transfer the seared chicken to the slow cooker and add soy sauce, lime juice, orange juice, lime zest, pineapple chunks with juice, bell peppers, garlic, ginger, brown sugar, hoisin sauce, and red pepper flakes if desired.
  3. Cover the slow cooker and cook on LOW for 7 to 8 hours or HIGH for 3 to 4 hours.
  4. In the last half hour of cooking, mix cornstarch with additional orange juice until dissolved and stir into the slow cooker to thicken the sauce.
  5. Once cooked, serve warm over rice or alongside vegetables, garnished with green onions, sesame seeds, and slivered almonds.
