  • 2 pounds raw shrimp, peeled and deveined
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 2 fresh celery ribs, trimmed and chopped
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 2 cups corn (fresh, frozen, or canned)
  • 2 cups heavy cream
  • 4 ounces cream cheese, cubed
  • 1 cup cheddar cheese
  • 1 cup pepper Jack cheese
  • 1 tablespoon parsley flakes
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • salt, black pepper, and cayenne pepper to taste
  • 3 to 4 tablespoons oil or butter

Instructions

  1. Season the shrimp with parsley flakes, onion powder, garlic powder, paprika, salt, black pepper, and cayenne pepper.
  2. In a Dutch oven over medium-high heat, sauté the onion, bell pepper, and celery in oil or butter until browned.
  3. Add minced garlic and cook for another minute.
  4. Stir in flour; reduce heat to medium-low and cook for 2 minutes.
  5. Gradually add chicken broth while stirring until fully incorporated.
  6. Cook until the mixture thickens (about 10 minutes).
  7. Stir in heavy cream, corn, cream cheese, cheddar cheese, and pepper Jack cheese until well combined.
  8. Add seasoned shrimp and cover partially; cook until shrimp reaches an internal temperature of 145°F (12 to 15 minutes).
