Ingredients
- 2 tablespoons olive oil (divided)
- ½ small onion (diced)
- 2 bell peppers (diced)
- 3 cups shredded chicken
- 4 cups shredded cheese (Oaxaca, Monterey Jack, or Mexican blend)
- 6 large flour tortillas
- Spices: chili powder, cumin, smoked paprika, salt, garlic powder, onion powder
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion and bell peppers until softened (8–10 minutes).
- Add shredded chicken and spices along with ¼ cup water; stir and cook until slightly thickened (3–4 minutes). Transfer to a bowl.
- In the same skillet, add another ½ teaspoon olive oil. Place one tortilla in the skillet; sprinkle cheese on half followed by chicken mixture and more cheese before folding.
- Cook until golden brown on both sides; repeat for remaining tortillas.
