Ingredients

Scale

For the Casserole:

  • 1 can (11 oz) shoepeg corn, drained

  • 1 can (15 oz) sweet yellow corn, drained

  • 1 can (14 oz) French-style green beans, drained

  • 1 cup sour cream

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 cup shredded cheddar cheese

  • ½ cup chopped onion

  • ½ cup chopped celery

  • 2 tbsp butter, melted

  • ½ tsp garlic powder

  • ½ tsp black pepper

  • ½ tsp salt

For the Topping:

  • 1 cup crushed buttery crackers (like Ritz)

  • 2 tbsp butter, melted

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with a little butter or non-stick spray.

Step 2: Mix the Casserole Ingredients

  1. In a large mixing bowl, combine the shoepeg corn, yellow corn, green beans, sour cream, cream of mushroom soup, shredded cheddar cheese, chopped onion, chopped celery, melted butter, garlic powder, black pepper, and salt.

  2. Stir everything together until well combined and evenly coated.

Step 3: Assemble the Casserole

  1. Pour the corn mixture into the prepared baking dish.

  2. Spread it out evenly with a spatula to create a smooth layer.

Step 4: Prepare the Topping

  1. In a small bowl, mix the crushed buttery crackers with the melted butter until well coated.

  2. Sprinkle the cracker mixture evenly over the top of the casserole.

Step 5: Bake

  1. Place the casserole in the preheated oven and bake for 30–35 minutes, or until bubbly and the topping is golden brown.

  2. If you like a crispier topping, broil for an additional 1–2 minutes at the end—watch closely to prevent burning.

Step 6: Cool and Serve

  1. Let the casserole sit for 5 minutes before serving to help it set up slightly.

  2. Serve warm as a hearty side dish to complement your main meal.

Notes

Drain Vegetables Well – Extra moisture can make the casserole soggy.
Use Fresh or Frozen Veggies – If preferred, substitute canned veggies with fresh or thawed frozen ones.
Customize the Cheese – Try Monterey Jack, mozzarella, or a cheddar blend for different flavors.
Add Protein – Mix in cooked shredded chicken or turkey for a full meal casserole.
Make Ahead – Assemble the casserole, cover, and refrigerate for up to 24 hours before baking.
