  • 1 9-inch unbaked pie crust (homemade or store-bought)

For the Honey Filling:

  • ½ cup (1 stick) unsalted butter, melted

  • ¾ cup granulated sugar

  • 2 tbsp fine cornmeal (adds slight texture and stability)

  • ½ tsp salt

  • 3 large eggs

  • ½ cup heavy cream

  • 2 tbsp white vinegar or lemon juice

  • ¾ cup honey (use good-quality, floral honey for best flavor)

  • 1 tsp vanilla extract

  • Flaky sea salt for topping (such as Maldon)


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).

  2. Place a baking sheet on the middle rack to preheat—it helps cook the bottom crust evenly.

Step 2: Prepare the Pie Crust

  1. Roll out and fit your pie crust into a 9-inch pie dish.

  2. Crimp the edges and chill in the refrigerator while you make the filling.

Step 3: Make the Filling

  1. In a large bowl, whisk together the melted butter, sugar, cornmeal, and salt.

  2. Add eggs one at a time, whisking well after each addition.

  3. Stir in cream, vinegar (or lemon juice), honey, and vanilla extract.

  4. Whisk until the mixture is smooth and glossy.

Step 4: Fill & Bake

  1. Pour the filling into the chilled pie crust.

  2. Place the pie dish on the preheated baking sheet in the oven.

  3. Bake for 45–50 minutes, or until the edges are set and the center has just a slight jiggle.

  4. Check at the 30-minute mark—if the crust is browning too quickly, cover the edges with foil or a pie shield.

Step 5: Cool & Finish

  1. Let the pie cool at room temperature for at least 2 hours to allow the custard to set fully.

  2. Before serving, sprinkle the top with flaky sea salt.

Step 6: Slice & Serve

 

  1. Slice the pie with a sharp knife and serve as-is or with a dollop of whipped cream or vanilla ice cream.

  2. Enjoy at room temperature or chilled—both are delicious!

Notes

Use High-Quality Honey – A floral or mild wildflower honey adds amazing flavor.
Don’t Overbake – The center should still have a gentle jiggle when done.
