  • 15 ounces canned salmon (drained and deboned)
  • 3/4 cup crushed saltine crackers
  • 2 teaspoons minced garlic
  • 1 egg
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon Old Bay seasoning
  • 1/2 tablespoon Italian seasoning
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine the salmon, crushed crackers, minced garlic, egg, pepper, salt, onion powder, Old Bay seasoning, and Italian seasoning. Mix until well combined.
  2. Cover the mixture and chill in the refrigerator for about 20 minutes to help it firm up.
  3. Shape the chilled mixture into patties about 2 inches wide and 1/2 inch thick.
  4. Heat vegetable oil in a skillet over medium-high heat until hot.
  5. Fry each patty for approximately 3-4 minutes on each side until golden brown. Use a spatula to flip gently.
  6. Transfer cooked patties to a paper towel-lined plate to absorb excess oil before serving warm with parsley and lemon wedges.
