For the Veggies:

  • 1 lb baby red potatoes, halved

  • 1 lb fresh green beans, trimmed

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried dill

  • ½ tsp dried parsley

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ tsp paprika (optional, for a little color and warmth)

For the Creamy Ranch Drizzle (optional):

  • ¼ cup plain Greek yogurt or sour cream

  • 1 tsp lemon juice

  • ½ tsp garlic powder

  • ½ tsp dried dill

  • Salt & pepper to taste


Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

Step 2: Prep the Potatoes
In a large mixing bowl, toss the halved baby potatoes with 1 tbsp olive oil.
Add half the seasoning: ½ tsp garlic powder, ¼ tsp onion powder, ¼ tsp dried dill, ¼ tsp parsley, ¼ tsp salt, ¼ tsp pepper, and paprika if using.
Spread the potatoes cut side down on the baking sheet and roast for 15 minutes.

Step 3: Prep the Green Beans
While the potatoes are roasting, toss the green beans in the same mixing bowl with the remaining 1 tbsp olive oil and the rest of the seasoning.
Make sure the beans are evenly coated for maximum flavor.

Step 4: Add the Green Beans to the Sheet
After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven.
Add the green beans to the sheet, spreading them out evenly among the potatoes.
Return the pan to the oven and roast for another 20-25 minutes, flipping once halfway through, until the potatoes are golden and the beans are tender-crisp.

Step 5: Make the Creamy Ranch Drizzle (Optional)
In a small bowl, whisk together the Greek yogurt (or sour cream), lemon juice, garlic powder, dill, and a pinch of salt and pepper.
Taste and adjust seasoning if needed.
This adds a cool, creamy contrast to the warm veggies.

Step 6: Serve & Enjoy
Transfer the roasted green beans and potatoes to a serving platter.
Drizzle with the creamy ranch sauce if using, or serve it on the side.
