Ingredients

Scale

For the Chicken Skewers:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

  • 2 tbsp olive oil

  • 3 tbsp ranch seasoning mix (store-bought or homemade)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp black pepper

  • ½ tsp paprika

  • Wooden or metal skewers

For Garnish & Serving:

  • Fresh parsley, chopped

  • Ranch dressing for dipping

  • Lemon wedges

Instructions

Step 1: Prepare the Chicken
Cut the chicken into even 1-inch cubes to ensure even cooking.
In a large mixing bowl, combine olive oil, ranch seasoning, garlic powder, onion powder, black pepper, and paprika.
Add the chicken pieces and toss well to coat evenly. Cover and marinate for at least 30 minutes (up to 4 hours for deeper flavor).

Step 2: Preheat the Grill or Oven
If grilling, preheat your grill to medium-high heat.
If using the oven, preheat to 400°F (200°C) and line a baking sheet with parchment paper.

Step 3: Assemble the Skewers
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Step 4: Cook the Skewers
Grill: Place the skewers on the grill and cook for about 10-12 minutes, turning every few minutes, until the chicken is cooked through and has a nice char.
Oven: Arrange the skewers on the prepared baking sheet and bake for 15-18 minutes, flipping halfway, until fully cooked. Broil for an extra 1-2 minutes if you want a slight char.

Step 5: Garnish and Serve
Remove the skewers from the grill or oven.
Sprinkle with freshly chopped parsley and serve with ranch dressing and lemon wedges on the side.

Notes

Marinate Longer – Let the chicken soak up the flavors for at least 30 minutes.
Even Cubes – Cut chicken into uniform pieces to ensure they cook evenly.
Soak Wooden Skewers – Prevent burning by soaking them in water if grilling.
Don’t Overcook – Chicken cooks quickly; watch closely to keep it juicy.
Customize It – Add vegetables like bell peppers or zucchini between chicken pieces for extra color and flavor.
