For the Roasted Cauliflower:

  • 1 large head cauliflower, cut into bite-sized florets

  • 1 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

For the Queso Cheese Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour (use gluten-free if needed)

  • 1½ cups whole milk (warm)

  • 1½ cups shredded sharp cheddar cheese

  • ½ cup shredded Monterey Jack or mozzarella cheese

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp smoked paprika (optional)

  • 1 small can (4 oz) mild green chilies

  • Salt and pepper to taste

For the Topping:

  • ½ cup shredded cheddar or pepper jack cheese

  • 2 tbsp chopped fresh cilantro or green onions (optional)

  • Crushed tortilla chips or toasted breadcrumbs (optional for crunch)


Instructions

Step 1: Roast the Cauliflower

  1. Preheat your oven to 425°F (220°C).

  2. Toss the cauliflower florets with olive oil, salt, and pepper.

  3. Spread on a baking sheet and roast for 20–25 minutes until tender and slightly browned.

  4. Set aside and reduce oven temperature to 375°F (190°C).

Step 2: Make the Queso Sauce

  1. In a medium saucepan, melt butter over medium heat.

  2. Whisk in flour and cook for 1–2 minutes to form a roux.

  3. Gradually whisk in the warm milk until smooth.

  4. Bring to a simmer, then reduce heat and cook until slightly thickened (3–5 minutes).

  5. Stir in cheddar, Monterey Jack, garlic powder, onion powder, paprika, and green chilies.

  6. Stir until cheese is melted and sauce is creamy.

  7. Taste and season with salt and pepper as needed.

Step 3: Assemble the Bake

  1. In a greased baking dish, add roasted cauliflower.

  2. Pour the queso sauce over the top and gently mix to coat evenly.

  3. Sprinkle with additional cheese and optional crushed chips or breadcrumbs.

Step 4: Bake the Dish

  1. Bake uncovered at 375°F (190°C) for 15–20 minutes until bubbly and golden on top.

  2. Remove from oven and let sit for 5 minutes before serving.

Step 5: Garnish & Serve

 

  1. Sprinkle with chopped cilantro or green onions for a pop of color.

  2. Serve warm with your favorite main or as a satisfying meatless entree.
