Ingredients
For the Roasted Cauliflower:

1 large head cauliflower, cut into bite-sized florets

For the Queso Cheese Sauce:

2 tbsp butter

2 tbsp all-purpose flour (use gluten-free if needed)

1½ cups whole milk (warm)

1½ cups shredded sharp cheddar cheese

½ cup shredded Monterey Jack or mozzarella cheese

1 tsp garlic powder

½ tsp onion powder

¼ tsp smoked paprika (optional)

1 small can (4 oz) mild green chilies

Salt and pepper to taste
For the Topping:

Instructions
Step 1: Roast the Cauliflower

Preheat your oven to 425°F (220°C).

Toss the cauliflower florets with olive oil, salt, and pepper.

Spread on a baking sheet and roast for 20–25 minutes until tender and slightly browned.

Set aside and reduce oven temperature to 375°F (190°C).
Step 2: Make the Queso Sauce

In a medium saucepan, melt butter over medium heat.
