  • 1 cup pure pumpkin (240 ml) (pumpkin puree)
  • 1/2 cup powdered sugar (55 grams) (icing sugar)
  • 12 tablespoons cream (or milk)
  • For the Streusel Topping: 1/2 cup all-purpose flour (62.5 grams), 1/4 cup brown sugar (50 grams), 1/4 cup granulated sugar (50 grams), 1 teaspoon cinnamon, 1/4 cup unsalted butter (56 grams) (melted)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with muffin papers.
  2. In a bowl, mix together flour, brown sugar, granulated sugar, and cinnamon for the streusel topping. Add melted butter and mix until crumbly. Set aside.
  3. In a large mixing bowl, whisk together flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.
  4. In another bowl, combine vegetable oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and pure pumpkin; mix until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until just combined. Avoid overmixing.
  6. Spoon the batter into muffin cavities until two-thirds full and sprinkle with streusel topping.
  7. Bake for 25 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
  8. For the glaze: whisk powdered sugar with cream or milk until smooth and drizzle over cooled muffins.
