- 1 cup butter (melted, cooled)

- 3/4 cup packed brown sugar
- 1 egg yolk (at room temperature)
- 2 tsp vanilla
- 1 cup pumpkin puree (blotted to remove moisture)
- 2 cups butterscotch chips (divided)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine oats, flour, baking soda, cinnamon, and pumpkin pie spice.
- In another bowl, whisk together melted butter, sugar, brown sugar, egg yolk, vanilla, and pumpkin puree until smooth.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Fold in 1 1/2 cups of butterscotch chips gently.
- Drop tablespoonfuls of dough onto parchment-lined baking sheets and flatten slightly.
