  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup butter (melted, cooled)
  • 1 cup sugar
  • 3/4 cup packed brown sugar
  • 1 egg yolk (at room temperature)
  • 2 tsp vanilla
  • 1 cup pumpkin puree (blotted to remove moisture)
  • 2 cups butterscotch chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine oats, flour, baking soda, cinnamon, and pumpkin pie spice.
  3. In another bowl, whisk together melted butter, sugar, brown sugar, egg yolk, vanilla, and pumpkin puree until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in 1 1/2 cups of butterscotch chips gently.
  6. Drop tablespoonfuls of dough onto parchment-lined baking sheets and flatten slightly.
  7. Top each cookie with additional butterscotch chips before baking.
  8. Bake for 13–15 minutes until edges are golden and centers are set.
  9. Let cool on baking sheets for about 5 minutes before transferring to wire racks.
