  • 1/4 cup oat flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg (room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 cup canned pumpkin or pumpkin puree
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • ½ tablespoon water
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and grease your mini donut pan.
  2. In a bowl, whisk together the all-purpose flour, oat flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, mix the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
  4. Combine wet and dry ingredients gently until just mixed; do not overmix.
  5. Fill each cavity of the donut pan halfway with batter using a piping bag.
  6. Bake for about 6–7 minutes or until they spring back when touched.
  7. Cool on a wire rack before glazing.
  8. For the glaze, whisk together powdered sugar, maple syrup, corn syrup, water, and cinnamon until smooth. Dip cooled donuts into glaze and let set.
