Ingredients
- 3/4 cup all-purpose flour
- 1/4 cup oat flour
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg (room temperature)
- 1/3 cup light brown sugar
- 1/4 cup oil
- 1/2 cup canned pumpkin or pumpkin puree
- 1¼ cups powdered sugar
- 3 tablespoons pure maple syrup
- 1 tablespoon dark corn syrup
- ½ tablespoon water
- ¼ teaspoon ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C) and grease your mini donut pan.
- In a bowl, whisk together the all-purpose flour, oat flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
- In another bowl, mix the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
- Combine wet and dry ingredients gently until just mixed; do not overmix.
- Fill each cavity of the donut pan halfway with batter using a piping bag.
- Bake for about 6–7 minutes or until they spring back when touched.
- Cool on a wire rack before glazing.
- For the glaze, whisk together powdered sugar, maple syrup, corn syrup, water, and cinnamon until smooth. Dip cooled donuts into glaze and let set.
