Ingredients

For the Fries:
1½ lbs frozen French fries (waffle or steak fries recommended)
1 tbsp olive oil (if baking)
Salt and pepper, to taste

For the Philly Steak Topping:
1 tbsp olive oil or butter
1 lb thinly sliced beef (ribeye, sirloin, or shaved steak)
1 medium onion, thinly sliced
1 small green bell pepper, thinly sliced (optional)
½ tsp garlic powder
Salt and pepper, to taste

For the Cheese Sauce:
2 tbsp butter
2 tbsp all-purpose flour
1 cup milk
1 cup shredded provolone or white cheddar cheese
¼ tsp salt
¼ tsp black pepper

Optional Toppings:
Chopped parsley
Jalapeño slices
Hot sauce or ranch drizzle


Instructions

Step 1: Cook the Fries
Bake or air fry your French fries according to package instructions until crispy and golden.
Season with a little salt and pepper right out of the oven.

Step 2: Make the Philly Steak Topping
Heat olive oil or butter in a skillet over medium-high heat.
Add onions (and bell peppers, if using) and sauté until soft and slightly caramelized (about 6–8 minutes).
Add the thinly sliced beef, season with garlic powder, salt, and pepper, and cook until just browned.
Remove from heat and keep warm.

Step 3: Make the Cheese Sauce
In a medium saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute to create a roux.
Slowly whisk in milk, stirring constantly until thickened (about 3–4 minutes).
Add shredded cheese, salt, and pepper. Stir until melted and smooth.
Remove from heat.

Step 4: Assemble the Fries
Spread fries on a large platter or tray.
Top with cooked steak and onion mixture.
Drizzle generously with warm cheese sauce.

Step 5: Garnish & Serve
Sprinkle with chopped parsley, jalapeños, or an extra handful of shredded cheese if desired.
Serve hot and dig in!
