Ingredients
For the Meatloaf:

2 lbs ground beef (85/15 for flavor and moisture)

¾ cup breadcrumbs (plain or Italian-style)

½ cup milk

1 tbsp Worcestershire sauce

For the Philly Cheesesteak Filling:

1 tbsp olive oil

1 green bell pepper, finely diced

1 small yellow onion, finely diced

Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
Step 2: Sauté the Vegetables
Heat olive oil in a skillet over medium heat.
Add the diced onions and bell peppers.
Cook for 5-7 minutes until softened and slightly caramelized.
Season with salt and pepper. Remove from heat and let cool slightly.
Step 3: Make the Cheesesteak Filling
In a medium bowl, combine the sautéed vegetables with cream cheese and shredded provolone.
Mix until creamy and well incorporated. Set aside.
Step 4: Prepare the Meatloaf Mixture
In a large bowl, mix together the ground beef, egg, breadcrumbs, milk, Worcestershire sauce, salt, black pepper, garlic powder, and onion powder.
Mix just until combined—don’t overwork it to avoid tough meatloaf.
Step 5: Assemble the Meatloaf
Divide the meat mixture in half.
Form the first half into a loaf base in your prepared pan or baking sheet.
Make a shallow trench in the center and fill it with the cheesesteak mixture.
Top with the remaining meat mixture, sealing the edges to encase the filling completely.
Step 6: Bake
Cover loosely with aluminum foil.
Bake for 35 minutes.
Remove the foil, top with the remaining ½ cup of shredded provolone cheese.
Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C) and the cheese is melted and golden.
Step 7: Rest and Serve
Let the meatloaf rest for 10 minutes before slicing.
Garnish with chopped parsley if desired and serve warm.
